Humane advocates politely urged Mr. Dyer to remove foie gras from his offerings, but he refused. Mr. Dyer then wrote a letter to the Portland Tribune, saying the activists' outreach efforts are simply miseducating people, and that there "is a broad spectrum of how foie gras ducks are raised."
